There is an endless array of wonderful blue cheese. The common feature is the visible veins of blue-green mold. Textures, appearance and taste all vary immensely from one cheese to the next.
There are many flavour variations in the blue family. They range from salty and sweet to spicy and metallic.
Appearance & Texture:
Blues have streaks, or veins, of blue, green, grey or black mold running through them. They can be soft and creamy to dense and crumbly.
Care & Storage:
Store in original wrapping, or aluminum foil to keep air out. Keep blues away from other cheeses to avoid mold transfer.
