The semi-soft family is the most diverse in flavour. They can be made with sheep, cow, or goat milk or a combination of milks. Semi-soft cheeses have a good melting characteristic, so they are great for cooking.
The range of flavours in semi-soft cheeses is a little narrower than other styles. They are buttery, mild, earthy, milky, sweet and tangy.
Appearance & Texture:
Semi-soft cheeses are dense and usually off-white to pale, creamy yellow in color. The interior is usually smooth and supple and may sometimes contain tiny eyes. Because the paste is springy, these cheeses are sliceable and do not break when they are bent.
Care & Storage:
These cheeses should be wrapped in wax paper then loosely in plastic wrap and stored in the vegetable crisper of your refrigerator.
