Halloumi is a firm, brined, slightly springy white cheese, made from a mixture of goat, sheep and cow milks. Its texture is similar to mozzarella or thick feta. It has a strong, salty flavour thanks to the brine preserve. Cooking Halloumi removes all its saltiness and empowers it with a creamy texture.

Since the cheese has a high melting point, it can be fried or grilled.
